by Karen Ward.  A good basic book that convers most canning topics.

Pressure Cookers for Dummies

Here's another good book, if you have a pressure cooker or pressure canner. Like most of the "Dummies" books, it breaks things down very simply.

Putting Food By

Good explanation sof the underlying principles, methods and ingredients, in addition to recipes.

"Preserving Summer's Bounty" -
Written more like a novel to read than a reference, it does make an interesting read anddoes have recipes.

Stocking Up

Third edition, again from the Rodale Press, is a revised edition.  I got my first copy of this book in 1981 and it is still a refeerence on my bookshelf.

This is THE book on canning AND freezing!  My grandmother used this book when I was a child.  It tells you in simple instructions how to can almost anything; complete with recipes for jam, jellies, pickles, sauces, canning vegetables, meats, etc.  If it can be canned, this book likely tells you how!
