Oatmeal-Raison Cookies - Healthy and Tasty!

Yield: 24 cookies

Oatmeal raison cookies are, for many, the second best cookie after Toll House chocolate chip cookies. And healthier.  But still loaded with sugar and fat.  Not this version.  It is every bit as tasty, but also healthy! Even naturally gluten-free!

Ingredients

  • 4 cups old fashioned rolled oats, don't use the quick oats
  • 3 cups whole wheat flour
  • 2 large whole egg3
  • 4 egg whites (you can use the prepackaged liquid egg whites)
  • 2 cup ripe avocado, cubed
  • 2 medium-sized very ripe bananas (yellow with some black spots)
  • 1  cup unsweetened apple sauce
  • 2 tbsp. baking powder
  • 1  tsp. salt
  • 1  cup raisins
  • 1  cup shredded coconut (optional, if you like coconut)
  • 1 tsp. cinnamon

Directions

Step 1 - Preheat oven

Preheat the oven to 350 degrees F

Lightly grease (cooking spray, Crisco or coconut oil) a cookie sheet

Step 2 - Mix

In a large mixing bowl, mash up the banana and avocado until smooth.

Add the apple sauce, baking powder, salt, cinnamon and eggs and mix well until all is blended.

Fold in the flour, oats until the dry ingredients are wet.

Add the raisins and fold in until mixed well.

Step 3 - scoop cookies onto cookie sheet

Scoop spoonfuls (about the size of a ping pong ball) onto the cookie sheet.

Step 4 - Bake

Bake in the oven for about 15-28 minutes or until a knife or toothpick comes out clean and the sides are lightly browned.
